Portage only contains a 2.6.18-based xen kernel, which is very old and doesn't support modern hardware. The gentoo-xen-kernel project is providing more up-to-date kernels taken from OpenSUSE. These are not provided in an overlay, so will need to be manually added to the sihnon overlay.
